For preparing Bedmi Puri you will require 2 cups wheat flour, ½ cup soaked urad dal ground into paste, 1 teaspoon fennel, 1 teaspoon crushed coriander seeds, 1 teaspoon chilli powder, 1 teaspoon turmeric, 1 tablespoon ginger paste, salt to taste and mustard oil for frying. The mixture of spices and dal creates a thick dough giving Bedmi Puri its unique flavour and chewy traditional texture.
Combine flour with urad dal paste, spices and salt, kneading into a firm dough. Rest for 20 minutes and divide into balls. Roll into thick discs and fry in hot mustard oil, pressing gently to help them puff. Bedmi puri tastes best with aloo sabzi or aam ka achar.
